Happy Recipe Friday!
Today we will be featuring our very own graphic designer, Heather Rozeboom, who also happens to be a fantastic vegan baker.
I am so happy that I get to share a recipe today with all the #LiveYourHealth readers. Living a plant-based lifestyle is very important to me, my original motivation for going vegan was based on ethics, my conscience, and not wanting to participate in or perpetuate a violent and immoral system of taking a life to sustain my own. Plus, I love this way of eating for its side benefit of helping me be healthy. I have been vegan going on six years now, but prior to that, I was vegetarian for twenty. Near the same time that I embarked on this plant-filled adventure, I started a Facebook page called Vegan Virginia Beach, which is simply an online grouping of people who feel drawn to the lifestyle. In the years of operation, we have had two successful bake sales raising money for worthy causes, which I am very proud of.
I enjoy cooking and I believe that every time I start to make a meal it is an opportunity to nourish my body. I feel that when I go to Fruitive the same care that I would take at home, in my own kitchen, is shared by the staff there. It is very nice to have a healthy restaurant to enjoy delicious plant-rich foods and also to know that when I leave, I am healthier than when I arrived. You don’t get to have that experience anywhere else!
Additionally, I love chocolate and people often ask, “doesn’t all chocolate have milk in it?” The answer is no! Good quality dark chocolate does not have any animal products, more specially, it does not have cow’s milk. It is easy to go to the store and find a chocolate bar that will satisfy any craving, you just have to read a couple of labels – which you should be doing anyway!
The reason I bring up chocolate is because I do love desserts! I have a big sweet tooth, which is unfortunate, but I know I’m not alone. So, today I am going to share a recipe that I know everyone will love.
Chocolate Cranberry Granola Bars!
Speaking of label reading, have you ever read the ingredients on a typical granola bar? I have, and I don’t want to eat anything that is that gross. You know what I’m talking about! So, that’s why I decided to make my own. They are extremely easy to make, and turn out to be super delicious! Take it from my husband, he thinks they are incredible and kind of thinks I’m magical – I can live with that!
These bars are chewy, chocolaty, and customizable!
So if you don’t like something, leave it out or replace it with something else. Also, you can be as healthy with these as you want to be. I use brown rice cereal and all organic ingredients, so I feel that minus the brown sugar, these are pretty healthy as far as snack treats go. Go ahead and pack them in your kids’ lunches, and let your family gobble them up! It can be your little secret, these granola bars are super healthy – packed full of B vitamins, fiber, and essential fatty acids – but still taste great!
