And Valentine’s Day! Today we are featuring Jaime & Carrie, sisters and authors of Zest & Zeal. Enjoy!
Hello! We are Jaime and Carrie – two sisters, two specialties, one purpose. We’re a nutritionist and a teacher– and both new moms–here to share our zest and zeal for healthy, thoughtful living…served with a side of fun. We are using our professional backgrounds in nutrition and education to communicate our passion for helping families be as healthful and happy as possible. Our goal is to live a life of balance and thoughtfulness, while having fun and enjoying life’s many pleasures.
Our backgrounds in nutrition and education give us unique perspectives and credible experience with the topics we write about. We love sharing our thoughts and adventures as we explore motherhood and life with a goal of (mostly) clean, thoughtful, and zesty living! As busy new moms, there is not a lot of time for gourmet cooking in our lives right now. You will find most of our recipes are simple, contain only whole foods, do not have an overwhelming list of ingredients, and are full of health benefits. All of our recipes are gluten-free and do not contain processed ingredients or refined sugar. Many recipes are dairy-free, some are Paleo-friendly, and you will find many vegetarian and vegan options, as well.

We do not put a label on the type of “diet” we eat. We believe in eating for health and that what works for one person may not work for another. It is about your own personal journey to health through awareness, process of elimination, and lifestyle choices. Winter Kale Salad
What You’ll Need:
2 small bunches of lacinato kale
1 orange, peeled and chopped
1/4 cup finely diced red onion
Raw sunflower seeds
Shredded, unsweetened coconut flakes (I love Let’s Do Organic)
For the dressing
Juice of 2 lemons
1 Tablespoon of raw apple cider vinegar (Bragg’s is my favorite)
1 teaspoon of fresh squeezed orange juice
Generous dash of turmeric
Dash of cumin
2 Tablespoons olive oil
1-2 teaspoons of agave
1/2 teaspoon of sea salt
What You’ll Do:
1. Remove the stems and chop the kale.
2. Wash the kale leaves (I like to use a salad spinner).
3. Place the kale in a large bowl.
4. Mix ingredients for the dressing by shaking in a jar or whisking.
5. Pour dressing over kale leaves and massage the leaves to mix thoroughly.
6. Taste a leaf and adjust flavors as necessary. You may want to add more orange juice, lemon, vinegar, salt, spices, or agave depending on your preference.
7. Place kale on plates or serving bowl.
8. Garnish with orange pieces, red onion, sunflower seeds, and coconut flakes.
