Today we are featuring Tedi Sarah, plant-based enthusiast and founder of Tedi Sarah the blog!
Hi! I’m Tedi. I am a psychotherapist, child life specialist, animal lover and plant-enthusiast. In fact I’m into plants so much that after graduate school I went on to get a certificate in plant-based nutrition from the T. Colin Campbell Center for Nutrition Studies. I have two bunnies named Hank and Henry that I adopted from a shelter in Chicago. They were the original plant-based boys in my house and together we’re trying to show the world how great plant-based eating can be!
I live my health by nourishing my body with all those wonderful, nutrient-rich fruits, veggies, legumes, grains and nuts that make up a plant-strong diet. It’s hard to put into words just how great it feels to know you’ve eaten a meal that only put healthy, chemical free plant foods into your body. After I started eating plant-strong my workouts got better, my muscles got stronger, my energy increased, my skin got clearer, my conscience felt at ease (no more eating our animal friends!) and overall I just felt better. In living my health I try to keep firmly in mind this quote by famous health advocate Ann Wigmore…
“The food you eat can be either the safest and most powerful form of medicine or the slowest form of poison.”
With my interest in counseling and nutrition, and my desire to make this world a better place, I just kept thinking, how can I combine everything I know, all my passions and education, into one neat package that will allow me to help lots of people? And that’s when it came to me…a blog! And so Tedi Sarah the blog was born to offer ideas for plant-strong eating, kind living and overall health and wellness.
I love what they are doing over at Fruitive and if I ever find myself in Virginia checking them out will be one of the first things on my to-do list! I would love to have a place like Fruitive where I live. All you Virginia Beach people are so lucky to have Fruitive in your area!
Avocado & Apple Salad
Here is a recipe for a yummy Avocado & Apple Salad. It’s great for lunch, a snack or as a side for dinner. Hope you enjoy!
What You’ll Need
1 organic apple
1 organic avocado
1 garlic clove, thinly sliced
onion chopped to taste, about a 1/2 cup
salt & pepper to taste
olive oil, just a little to drizzle over the salad
sprouts, to garnish
What You’ll Do
1. Dice apple, avocado and onion. Mix together.
2. Slice garlic and add to apple, avocado and onion mix.
3. Season with salt and pepper, to taste. Drizzle with olive oil.
4. Garnish with sprouts.
