Today we are featuring the lovely Lauren Felts – certified nutritionist, author, and the brains behind The Holy Kale!
Lauren Felts is a certified nutritionist and author who has mastered the art of health through multiple facets of training. A graduate of University of Southern California, her personal health journey brought her to working in all aspects of the wellness field: managing supplement sales and education for a national manufacturer, working in private practice, contributing editorials to influential publications, and supporting the launch of a raw culinary school and restaurant. Her expertise culminates all veins of the field, but it is through her unique, fun and approachable voice found in her website, The Holy Kale, where she is able to inspire you, the reader, on your quest for health. LAUREN, CAN YOU TELL US A LITTLE MORE ABOUT THE HOLY KALE?
The Holy Kale is a health and wellness site intended to make you feel happy, uplifted and motivated. Through that my hope is to encourage one to take charge of life. I have worked to create a space that is based on love and the positive rather than fear and the negative, because inspiration comes from a desire to change, rather than a fear of not changing. The Holy Kale is a website where you can find everything you need to reignite the health of your mind, body and soul through a wide range of information that I hope will reconnect you with your body and the earth.
HOW DO YOU #LIVEYOURHEALTH?
I live each and every day with the most energy and vibrancy I can create. I start my day with green juice and a superfood smoothie, a walk on the beach, and a short yoga sequence. From there I dive into my work, writing and creating ways in which to inspire others to take charge of their life. I break up the day with a large greens salad and coconut water. Once the afternoon has begun, I dive into the more creative aspect of my job – recipe creations, photography shoots, and product research. This is my favorite part of the day! In the evening, I close my day with a work out of either a bike ride, walk or pilates session, and a good chat with my family. Then comes a long hot shower, dry brushing, a meditation and a good book. Before I sleep I make sure to reflect on the day, focusing on gratitude for the life I have been given, and hope for the future, helping to create the life I want to have.
DECONSTRUCTED RAW GRILLED CHEESE & TOMATO SOUP
1 cup macadamia nuts
1/4 cup nutritional yeast
2 tsp. lemon juice
1/4 tsp sea salt
1 cup red bell pepper, chopped
1 tbs. basil leaves, chopped
1 tbs. olive oil
optional: pinch of cayenne
Add all ingredients into a high-speed blender and blend on high. Blend until creamy. Consistency will be like a batter. You most likely will have to use a tamper to ensure a proper and thorough blend.
Then add a dollop of the batter to a dehydrator tray. Create cracker size circles, about 2 inches by 2 inches each. Dehydrate on 100 – 120 degrees for 48 hours, or until dry. Check every 12 hours to monitor the dryness. If you like them softer, take them out earlier. If you like them drier, wait longer.
Once properly dehydrated, remove and eat with the “ketchup.”
3/4 cup blended tomato (1-2 medium tomato)
1/4 cup raw apple cider vinegar
2 tbs. coconut aminos
2 tbs. raw agave
2 cloves of garlic
1 cup sun-dried tomato (oil packed)
Add all ingredients to a high-speed blender and turn on high. Blend on high until smooth.
