Recipe Friday: Roasted veggie sandwich

Happy Recipe Friday!

ROASTED VEGGIE SANDWICH

Ingredients
Pick your veggies – broccoli, carrots, eggplant, zucchini, tomato, red onion, bell pepper, cauliflower, mushrooms.
1 clove of garlic minced (mince more depending on how many veggies you’re roasting)
Extra virgin olive oil
Kosher salt
Ground pepper
Plant-based pesto (#1 or #2) or plant-based mayo or both
Slices of your favorite bread

Directions
Preheat oven to 425 degrees F.
Cut your veggies into long, thin slices.
Place veggies in mixing bowl and toss with olive oil until veggies are all lightly coated, then season with salt and pepper to taste.
Spread veggies on baking sheet. Then evenly distribute minced garlic on top of veggies.
Place in oven and bake for 30 to 45 minutes, checking every 15 minutes – the tenderness of the veggies is based on preference.
As the veggies are cooking, prepare your bread. Toast if desired and slather on plant-based pesto or mayo.
Once the veggies are ready, layer up your sandwich(es), cut in half if desired, and enjoy!
