Recipe Friday: Raw Chocolate Balls

Happy Recipe Friday!
Today we are featuring Tjasa, the blogger and brains behind Sprinkle of Cinnamon.
MEET TJASA
Hello readers of #LiveYourHealth, I am Tjasa, the blogger behind Sprinkle of Cinnamon. More than anything, I love to cook and eat good food, and that’s how Sprinkle of Cinnamon came to be. I believe food should be both delicious and enjoyable. There are so many amazing fruits and vegetables out there, it would be a shame not to experiment with them. I love creating different flavors, discovering new ingredients and coming up with new recipes.
HOW I #LIVEMYHEALTH
I’ve been a vegetarian for more than ten years now. I was quite young when I decided to stop eating meat, due to ethical reasons, and never looked back. Often people ask me, “what do you eat, if you don’t eat meat and fish?” And I just reply, “everything else,” cause it’s true. There are countless options and ways to eat delicious, versatile, healthy vegetarian food. Plus, I think veggie meals taste way better than meat!
I love food way too much to intentionally be avoiding any food groups (with the exception of meat). I would say I eat rather healthy as I try to avoid refined sugars and flour as much as possible, I never start a day without a big green smoothie and I love vegetables, so I include a lot of them into my meals. I feel the best when I eat a lot of greens, and my body appreciates it. However, my weakness, DESSERTS, and chocolate, but even those can be healthy and guilt-free, like these raw chocolate balls. I cannot resist a good raw dessert, everything in moderation right.
ABOUT SPRINKLE OF CINNAMON
I started Sprinkle of Cinnamon, last year, as a way to share my recipes and love for food. Sprinkle of Cinnamon started as a food blog – I really wanted a place to document my recipes and share them with my friends – however, over time, my blog started to grow, and I felt the need to expand beyond just food. So, I started to add a few more lifestyle topics, and soon Sprinkle of Cinnamon became a lifestyle blog. It now allows me to write about anything I want, share my passions, DIY projects and all the other little things that inspire me. I never thought I would one day have a blog, but here I am today, loving it, and maybe even hoping to one day turn this into my full time job. Who knows??
I hope you enjoy my recipe! These raw chocolate balls are really delicious, quick to make, and great for an on-the-go healthy snack and energy boost.
RAW CHOCOLATE BALLS
(Makes 10-14 raw balls)
Ingredients:
3 large Medjool Dates, pitted
1/4 cup cocoa butter
1 cup ground almonds
1 1/2 table spoon cacao powder
1 1/2 table spoon shredded coconut
A pinch of salt
1/4 teaspoon of vanilla
extra shredded coconut
Directions:
Soften the cocoa butter on the stove (or in the microwave), make sure it’s not melted completely.
In a blender (or food processor) mix together the dates and half of the ground almonds into a sticky paste. Add the remaining almonds, coconut, cacao powder, salt, vanilla and cocoa butter. Pulse to get everything combined together. You should end up with a sticky mixture, if it appears too wet, add more almonds, and if it’s too dry, add more cocoa butter. Place in the fridge for about half an hour to set.
Roll the mixture into small, bite-size balls and roll each one in shredded coconut. You can also roll them into chopped nuts, cocoa nibs, seeds or leave them plain.
