Recipe Friday: GF, V Chocolate Chip Banana Bread

Happy Recipe Friday!
Gluten-Free, Vegan Chocolate Chip Banana Bread
Ingredients
2 cups gluten-free rolled oats
1/4 cup almond flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1 heaping teaspoon cinnamon
1 large pinch (or 2) of kosher salt
2 1/2 large (or 3 medium) ripe (but not necessarily overripe) bananas
1/4 cup maple syrup
1/4 cup unsweetened applesauce
1 teaspoon vanilla extract
1 large handful of walnut pieces
1 large, overflowing handful of vegan/dairy-free chocolate chips
1 tablespoon chia seeds
Directions
Preheat oven to 350 degrees F.
In a blender or food processor blend all dry ingredients (oats, almond flour, baking soda, baking powder, cinnamon, & salt) until the oats have become a flour-like texture.
Pour you flour mixture in a large bowl.
Next, place all wet ingredients (bananas, maple syrup, applesauce, & vanilla extract) in blender and blend.
Pour your new liquid mixture over your flour mixture. Fold, mix, & combine.
Next, add in your optional, but delicious, ingredients – walnut pieces, chocolate chips, and chia seeds. Fold and mix.
Pour into an 8×8 pan that’s been greased with a little coconut oil.
Bake for about 18 minutes, or until a fork comes out clean.
