Summer Harvest Salad
1 large handful of arugula
1 large handful of spinach
1 peach or nectarine (cut into cubes)
1 whole avocado (pitted and scooped)
1 yellow bell pepper (chopped up)
1 large handful of cherry or grape tomatoes (cut in half)
Extra Virgin Olive Oil
California Balsamic Vinegar
Kosher Salt & Black Pepper
Grab a large bowl
Add all salad ingredients – the order doesn’t matter.
Dress salad – “eye-pour” the olive oil (make sure it coats the top layer of your salad). Add your desired amount of balsamic vinegar. Then generously add hemp seeds! Toss. Add salt and pepper to taste and toss again.
